I first heard about Cake Balls over on DigiShopTalk and I found a recipe for them and I ended up making some. Oh. My. Goodness!! I was in heaven.. they are so good! They didn't last very long of course and they took awhile to make but now that I've done it.. I am sure that I could come up with some shortcuts that will make the process go faster and hopefully a little bit cleaner. I really made a huge mess. But what a tasty mess.
Here is the recipe and a picture of my finished Cake Balls.
INGREDIENTS
1 (18.25 ounce) package cake mix
1 (16 ounce) container prepared frosting
1 (3 ounce) bar chocolate flavored confectioners coating
DIRECTIONS
Bake cake as directed. Let cool for about 15 minutes, crumble into a large bowl while still warm. Stir in container of frosting and mix well.
Form small balls using either your hands or a melon baller. Place in the freezer for about 10-15 minutes so they are well chilled. Meanwhile, melt chocolate stirring constantly. Use a toothpick and a large spoon to coat balls. Place on waxed paper to set. You could even do muffin cups if you wanted.
My notes: I used a package of chocolate chips, but I found this was not enough chocolate so next time I plan on using a couple of chocolate bars or something like that. Last time I melted down some pure chocolate truffles I had in the house. Those were so good!!!
These are SO not good for your pre-Reno diet!! LOL
